Vegan Chocolate Protein Pudding

Vegan Chocolate Protein Pudding

This recipe is not only packed with plant-based protein but also provides healthy fats from the avocado and natural sweetness from the ripe banana and maple syrup. It's a guilt-free and delicious treat for anyone following a vegan or plant-based diet!

- 1 ripe avocado, peeled and pitted

- 1 ripe banana

- 1/4 cup unsweetened cocoa powder

- 1/4 cup plant protein powder

- 2-3 tablespoons maple syrup or agave syrup (adjust to taste)

- 1 teaspoon pure vanilla extract

- Pinch of salt

- 1/2 to 3/4 cup unsweetened almond milk (or any other plant-based milk), adjust to desired consistency

- Optional toppings: sliced strawberries, shredded coconut, chopped nuts, or vegan chocolate chips.

1. In a blender or food processor, add the ripe avocado, banana, cocoa powder, plant-based protein powder, maple syrup (or agave syrup), vanilla extract, and a pinch of salt.

2. Blend the ingredients until smooth and creamy, adding almond milk gradually until you achieve your preferred consistency. You can add more milk for a smoother and lighter texture or less milk for a thicker and creamier pudding.

3. Taste the mixture and adjust sweetness to your liking by adding more syrup if needed.

4. Once the pudding is smooth and well-combined, transfer it to serving dishes or small jars.

5. Refrigerate the pudding for at least 30 minutes to allow it to set and chill.

6. Before serving, you can add your favorite toppings, such as sliced strawberries, shredded coconut, chopped nuts, or vegan chocolate chips.

7. Enjoy your vegan chocolate protein pudding as a delightful and nutritious dessert or snack!
